Pineapple cake
Upside-down Pineapple Cake
Ingredients
Topping and glaze
- 1 can pineapple slices in their juice
- ½ cup butter
- 7 tbsp sugar, granulated
- 2 tbsp water
- 2 drops of lemon juice
Cake Mix
- 6 eggs
- 1 cup flour
- 1 cup sugar, confectioners
- 1 tsp vanilla powder
- 2 tsp baking powder
Preparation
In a cake tray
- Put the tray on low heat
- Melt the granulated sugar in the water
- Add the lemon juice and let caramelize
Turn off the heat and take the tray off the heat source.
- Grease the tray bottom and sides by dragging a piece of butter all around the tray
- Arrange the pineapple slices at the bottom of the tray
Set aside
In a mixer bowl, using a mixer
- Beat the eggs, the confectioners sugar, and the vanilla until it doubles in size” and becomes cream-like
In the same bowl, using a wooden spoon/spatula
- Fold in the flour and baking powder in batches until all of it is incorporated into the batter
In the cake tray
- Pour the batter onto the pineapple slices
In a larger tray, half-filled with water
- Place the cake tray in the middle of a larger tray, pour hot water half-way through the larger tray
In a preheated oven
- Bake the cake for 20-30 minutes
- Remove from the oven and pour the Pineapple juice evenly across the tray
Let cool before flipping it upside down.
