Pineapple cake

Upside-down Pineapple Cake

Ingredients

Topping and glaze

  • ‍1 can pineapple slices in their juice
  • ½ cup butter
  • 7 tbsp sugar, granulated
  • 2 tbsp water
  • 2 drops of lemon juice

Cake Mix

  • ‍6 eggs
  • 1 cup flour
  • 1 cup sugar, confectioners
  • 1 tsp vanilla powder
  • 2 tsp baking powder

Preparation

In a cake tray

  • Put the tray on low heat
  • Melt the granulated sugar in the water
  • Add the lemon juice and let caramelize

Turn off the heat and take the tray off the heat source.

  • Grease the tray bottom and sides by dragging a piece of butter all around the tray
  • Arrange the pineapple slices at the bottom of the tray

Set aside

In a mixer bowl, using a mixer

  • Beat the eggs, the confectioners sugar, and the vanilla until it doubles in size” and becomes cream-like

In the same bowl, using a wooden spoon/spatula

  • Fold in the flour and baking powder in batches until all of it is incorporated into the batter

In the cake tray

  • Pour the batter onto the pineapple slices

In a larger tray, half-filled with water

  • Place the cake tray in the middle of a larger tray, pour hot water half-way through the larger tray

In a preheated oven

  • Bake the cake for 20-30 minutes

  • Remove from the oven and pour the Pineapple juice evenly across the tray

Let cool before flipping it upside down.
