Green Lentil Salad

This is a healthy salad rich in vitamins and minerals. The lentil proteins provide energy for the day. You can have this salad as breakfast or as a healthy snack. Enjoy!

Ingredients

  • 1 cup Lentils, green (boiled and drained)
  • 1 small Onion (diced)
  • 1 large Carrot (shredded)
  • 1 large Cucumber (diced)
  • 1 large Tomato (seeded & diced)
  • 1 medium Lemon (zested & juiced)
  • 1/4 cup Olive oil
  • 1 tsp Sumac
  • 1 tsp Cumin
  • 1 tsp Red pepper flakes
  • ½ tsp Pepper
  • Salt

Preparation

  • Mix all ingredients in a bowl.

Refrigerate for 15 mins to bring out all the flavors.
