Cooked Bulgur Salad
Ingredients
- 1 cup bulgur, fine
- a bunch of parsley (minced)
- 1 large onion (diced)
- 2,3 stalks celery (diced)
- 2 medium tomatoes (diced)
- 1 lemon (juiced)
- 1/2 cup vegetable oil
- 1/2 cup water
Condiments & Spices
- 1 tbsp tomato paste
- 1 tsp pomegranate molasses
- Salt & pepper
- 1/2 tsp red pepper flake
- 1/2 tsp sumac
- 1/2 tsp dried mint
- 1/2 tsp cumin
Preparation
In a pan
- Sweat the onions and the celery with some salt.
- Add the tomatoes, condiments and spices and boil.
- Add the water and cook until the tomato has melted.
- Stir in the bulgur.
- Cook for a few minutes and turn the heat off.
Let cool.
- Add the lemon juice and the Parsley before you serve.
Serving
Ich is more delicious when eaten with crunchy lettuce leaves.
