Coconut rolls

Coconut Filled Rolls

Ingredients

Dry ingredients

  • 4 cups all-purpose flour (sifted)
  • 8 tbsp sugar (sifted)
  • 3 tsp instant yeast
  • 1 tsp salt

Wet ingredients

  • 1 cup milk, liquid
  • ½ cup butter
  • 2 medium eggs

Filling

  • ⅔ cups confectioner’s sugar (sifted)
  • ½ cup butter (melted)
  • 1 egg white
  • 2 cups coconut, dried

Egg wash

  • 1 medium egg

Preparation

In a Saucepan

  • Heat the milk and the butter.

In a bowl

  • Combine all the dry ingredients.
  • Knead with the milk mixture.
  • Add in the eggs and knead.

Let the dough proof until it doubles in size.

In another bowl

  • ‍Mix the Filling ingredients.

On a flour-dusted counter-top

  • ‍Roll out half the dough until it’s about ½ cm thick.
  • Egg-wash the dough.
  • Spread the filling on top.
  • Roll the dough into a log.
  • Cut the log into 2 cm thick rolls.
  • Do the same with the remaining dough.

Preheat the oven

On lined and greased baking sheets

Let the rolls proof and double in size.

  • Egg-wash the rolls with the remaining egg and a tbsp of water.

In the preheated oven

  • ‍Bake for 25 -30 minutes.
