Coconut rolls
Coconut Filled Rolls
Ingredients
Dry ingredients
- 4 cups all-purpose flour (sifted)
- 8 tbsp sugar (sifted)
- 3 tsp instant yeast
- 1 tsp salt
Wet ingredients
- 1 cup milk, liquid
- ½ cup butter
- 2 medium eggs
Filling
- ⅔ cups confectioner’s sugar (sifted)
- ½ cup butter (melted)
- 1 egg white
- 2 cups coconut, dried
Egg wash
- 1 medium egg
Preparation
In a Saucepan
- Heat the milk and the butter.
In a bowl
- Combine all the dry ingredients.
- Knead with the milk mixture.
- Add in the eggs and knead.
Let the dough proof until it doubles in size.
In another bowl
- Mix the Filling ingredients.
On a flour-dusted counter-top
- Roll out half the dough until it’s about ½ cm thick.
- Egg-wash the dough.
- Spread the filling on top.
- Roll the dough into a log.
- Cut the log into 2 cm thick rolls.
- Do the same with the remaining dough.
Preheat the oven
On lined and greased baking sheets
Let the rolls proof and double in size.
- Egg-wash the rolls with the remaining egg and a tbsp of water.
In the preheated oven
- Bake for 25 -30 minutes.
