White Bean & Roasted Pepper Dip

Ingredients

  • 100 g Cannellini white beans (boiled & drained)
  • 1 clove Garlic
  • 1 or 2 Red Peppers (roasted, skinned & seeded)
  • Lemon (juiced & zested)
  • Salt & Pepper

Preparation

In a food processor

  • Blend all the ingredients together.

Serving

To serve as a dip, drizzle olive oil on top.

To serve on crostini, spread on the bread and top with a few boiled white beans and a drizzle of olive oil.
